Giovanni’s Shrimp Truck originated back in 1993 and has since become a staple to Oahu’s North Shore to visitors and locals alike.

The original shrimp truck started off making stops throughout the North Shore until they decided to permanently park in the beautiful, historic town of Kahuku in 1996. Their second location soon followed the year after in Haleiwa Town, “across the street from McDonald’s”.

Giovanni’s has served your selection of the tastiest Garlic, Hot & Spicy and Lemon-Butter Shrimp for over 20 years. They’ve won numerous awards for their delectable shrimp entrees, including top honors in Honolulu Star-Advertiser’s Hawaii’s Best awards as “Best Food Truck” for four consecutive years—2013, 2014, 2015 & 2016! They also placed first as “Best Food Truck” in the Honolulu Pulse Awards in 2015. Their increasing popularity continues to grow globally. They were even featured on the Travel Channel’s “Man vs. Food” and Food Network.

Today, Giovanni’s has two locations: Kahuku at 56-505 Kamehameha Hwy. and Haleiwa at 66-472 Kamehameha Hwy.

In 1945, after World War II, Maximo Gimenez, a Stanford-educated teacher, befriended American troops stationed at Quezon City, Philippines.

A few of the soldiers would come to his house for a drink or two. Eventually they insisted that they pay for their meals. It was then that Maximo decided to open a cafe that served chicken, steak and drinks.

To help him with the cafe, his wife Mercedes, and his sister-in-law Felipe, joined him there together with her niece Ruby, who managed the kitchen with her husband, Claro. It was Ruby who created a special recipe for chicken, which was so delicious, tender, juicy and crispy that got the G.I.s coming back for more. Soon enough, it became a legend with the Filipino public too.

Encouraged by her mother to expand the menu and serve more Filipino food, Ruby set up a restaurant and decided that it would be named “Max’s”, which was Maximo’s nickname.

Over the years, Max’s Restaurants grew in popularity and became known as “The House That Fried Chicken Built.”

Max’s now operates over a hundred restaurants all over the Philippines. Max’s aims to be a competitive international brand, and has expanded its operations to other countries overseas as well. It now has branches in North America (the first was opened in 1982) and the Middle East.

On Oahu, the Ilima Award winning Max’s of Manila is located in the Waipahu Shopping Plaza as well as in Dillingham’s Costco Iwilei Complex. Abundant customer parking is available in both locations.
